At Every Man & His Dog Vineyard in Richmond, Tasmania, we pour two white wines that between them represent something genuinely extraordinary in the wine world. This is the story of those wines — how they came to be, what makes them unlike anything else in your glass, and why we think they deserve to be on every serious wine lover’s radar.
A Vineyard Unlike Any Other
Tucked into the Coal River Valley at 1314 Richmond Road, Every Man & His Dog is not your typical Tasmanian cellar door. We share our property with Federation Chocolate — a bean-to-bar artisan chocolate maker — which means a visit here is already something different: cool-climate wine and handcrafted Tasmanian chocolate, made on the same soil, poured and tasted under the same roof.
But it’s what’s growing in our vineyard that makes us truly singular.
The Champion Vine: Siegerrebe
Most people have never heard of Siegerrebe. That’s exactly what makes it so special.
Pronounced zee-geh-RAY-buh, the name translates from German as “champion vine” or “victory vine” — a name earned through its remarkable ability to produce extraordinary must weights when other varieties simply couldn’t. Created in 1929 by Dr. Georg Scheu in Rheinhessen from a cross between Gewürztraminer and Madeleine Angevine, it was officially released for cultivation in 1958 and quickly earned a cult following among those who knew where to look.
Our Siegerrebe vines were first planted here more than forty years ago — long before we arrived, long before the cellar door took shape. There’s something quietly humbling about tending vines that have been reading this particular patch of Tasmanian soil for decades. They know this land in a way that can’t be rushed or replicated, and we think you can taste it in the glass.
Each vintage, our Siegerrebe grapes are among the very first wine grapes harvested in Tasmania — usually in mid-to-late February, while most of the island’s vineyards are still weeks away from picking. An early start for a wine that is, in every sense, ahead of its time.
What does it taste like? Nothing else you’ve ever tried. Open a bottle and the perfume alone stops a conversation: lychee, passionfruit, ripe peach, rose petal, honeysuckle, exotic spice. On the palate it’s generous and full, with a softness that makes it immediately, unmistakably its own thing. People reach for comparisons and none of them quite fit.
We bottle it as a single varietal wine under the name Jax’s Gold — and we produce just 150 bottles each year.
The Hidden Gem: Ehrenfelser
If Siegerrebe is rare, Ehrenfelser is almost invisible. A crossing of Riesling and Silvaner, also created in Germany in 1929, it occupies just 120 hectares of vineyard worldwide — a vanishingly small footprint for a grape of such genuine character. It offers something reminiscent of Riesling yet entirely its own: fragrant, fruit-forward, with honey, apricot, grapefruit, and floral notes woven through a crisp, elegant finish.
As far as we know, Every Man & His Dog Vineyard is the only place in Australia producing a varietal Ehrenfelser wine.
We call ours Jax’s Tipple. Again, just 150 bottles a year.
Two Rare Varieties. One Remarkable Vineyard.
Here’s the thing that sets us apart even on a global scale: we’re not aware of another vineyard in the Southern Hemisphere — and very possibly anywhere in the world — producing varietal wines from both Siegerrebe and Ehrenfelser on the same estate. These two obscure, extraordinary German varieties, growing side by side in the Tasmanian sun, harvested by the same hands, bottled in quantities so small that most wine lovers will never encounter them.
Unless they come to us.
And There’s More: Jax’s Sweet
To complete the experience, we pour our Eiswein — Jax’s Sweet — a cool-climate dessert wine of remarkable depth and sweetness. The grapes are left on the vines as long as possible, ripening to extraordinary concentration before undergoing a meticulous process that preserves and elevates their natural sugars. A perfect, decadent finale.
The Exquisite, Rare & Limited Tasting
This is the experience we’ve built around these three wines — and there is nothing else like it in Australian wine tourism.
For $45 per person, over approximately 45 minutes, we take you on a guided journey through Jax’s Gold, Jax’s Tipple, and Jax’s Sweet. We share the story behind each wine, the history of these remarkable varieties, and the four decades of Tasmanian soil that made them what they are.
This tasting is not available anywhere else. These wines are not available anywhere else. With only 150 bottles produced annually of each variety, even the opportunity to taste them is genuinely rare.
